Pasta Primavera
Ingredients
- 1 C. Broccoli Florets
- 1 C. Carrots, sliced
- 1 C. Zucchini, sliced
- 1 C. Macaroni or Rotini
- 1 Tbs Flour (for sauce)
- 1 Tbs. Margarine (for sauce)
- 1 C. Skim milk (for sauce)
- ¼ Tsp. Dried basil (for sauce)
- 1/8 Tsp. Black pepper (for sauce)
- 2 Tbs Parmesan (for sauce)
Directions
- Steam vegetables until tender crisp (you can do this in the microwave usually 2- 2 ½ minutes will do the trick).
- Cook macaroni according to package directions (drain and set aside).
- In a small saucepan, melt margarine, blend in flour. Gradually stir in milk and seasonings. (Do not add cheese at this time).
- Cook over medium heat, stirring constantly until sauce thickens.
- Remove from heat and blend in cheese.
- Pour over hot vegetables.
- Add macaroni and mix together.
