Pasta Primavera

Ingredients

  • 1 C. Broccoli Florets
  • 1 C. Carrots, sliced
  • 1 C. Zucchini, sliced
  • 1 C. Macaroni or Rotini
  • 1 Tbs Flour (for sauce)
  • 1 Tbs. Margarine (for sauce)
  • 1 C. Skim milk (for sauce)
  • ¼ Tsp. Dried basil (for sauce)
  • 1/8 Tsp. Black pepper (for sauce)
  • 2 Tbs Parmesan (for sauce)

Directions

  1. Steam vegetables until tender crisp (you can do this in the microwave usually 2- 2 ½ minutes will do the trick).
  2. Cook macaroni according to package directions (drain and set aside).
  3. In a small saucepan, melt margarine, blend in flour. Gradually stir in milk and seasonings. (Do not add cheese at this time).
  4. Cook over medium heat, stirring constantly until sauce thickens.
  5. Remove from heat and blend in cheese.
  6. Pour over hot vegetables.
  7. Add macaroni and mix together.
