Southwest Smoked Chicken Pita Pizza

Ingredients

  • 1 (5 oz.) boneless, skinless chicken breast, diced
  • ½ C. red pepper strips
  • ½ C. mushrooms, sliced
  • ½ C. onion, sliced
  • dash liquid smoke (buy in a bottle at grocery store)
  • 2 Tbs. BBQ sauce, lowest sodium available
  • 1 whole wheat pita
  • 1 oz. lite cheddar cheese, shredded
  • vegetable cooking spray

Directions

  1. In a nonstick skillet, sauté chicken for 1-2 minutes using the vegetable cooking spray.
  2. Add a red pepper, mushrooms, onions, and a few drops of the liquid smoke. Continue to cook until the vegetables are tender. Remove from heat.
  3. Split the pita bread into two rounds. Spread each half with 1 Tablespoon BBQ sauce and place on a baking sheet.
  4. Divide the chicken and vegetable mixture evenly between the two pita rounds and top each with ½ ounce of cheddar cheese. Toast in the oven until the cheese melts.
