Sweet Potato Chili

Ingredients

3 Tbs canola oil
2 large onions, finely diced
6 garlic cloves, minced
1 red bell pepper, finely diced
1 green bell pepper, finely diced
1 ½ Tbs chili powder
1 ½ tsp ground cumin
1 tsp dried oregano
5 Cups water
1 (28 ounce) can plum tomatoes, finely chopped with juice
¼ Cup tomato sauce mixed with ¼ cup water
2 medium sweet potatoes, peeled and diced into ½ inch pieces
2 (15 ounce) cans black beans, rinsed and well drained
¾ tsp salt

Directions

  1. Heat oil in a large stockpot over medium heat; add onions and garlic and sauté.
  2. Stir frequently until onions being at brown, at least 10 minutes.
  3. Stir in peppers and cook 10 minutes, stirring often.
  4. Sprinkle on chili powder and cumin and cook 2 minutes.
  5. Stir in all remaining ingredients and bring to a boil.
  6. Cook 15 minutes or just until sweet potatoes are tender.
  7. Stir occasionally, scraping the bottom of the pot.
