Vegetable Beef Soup


Ingredients

1# beef cubes for stew cut into bite sized pieces
2 tsp olive or canola oil
1 small onion chopped
1 large carrot diced
1 large celery stalk chopped
1 white potato peeled and cubed
½ cup fresh green beans cut into ½ inch pieces
¾ cup cut up green cabbage (optional)
1 large tomato diced
¼  cup quick cooking barley
4 cups beef stock or broth
2-3 cups water
Pepper to taste

Directions

In a large (8 qt) pot brown beef with onions in oil, add broth and 2 cups of water.
Add all vegetables and bring to a boil. Simmer for 1 hour or until vegetables and beef are tender. Add barley and cook an additional 10-15 minutes.
