Veggie & Chicken Pasta

Ingredients

  • ½ lb whole wheat pasta (regular pasta will work as well)
  • 1 Tablespoon olive oil
  • 2- 4oz boneless skinless chicken breasts cut into cubes
  • 1-2 bunches fresh broccoli cut into florets
  • ¼ c sun dried tomatoes chopped
  • 2-3 cloves fresh garlic, minced
  • 1 c chicken stock (canned or boxed will work)
  •  Salt and pepper to taste
  • 3 tablespoons parmesan cheese
  • 1-2 tsp flour

    Directions

      1. Cook pasta according to package direction adding broccoli during the last 2 minutes of cooking time. Drain and set aside.

      2. While pasta is cooking sauté chicken in  olive oil over medium heat.; once chicken is cooked through, stir in garlic and cook an additional 30 seconds.

      3. Add chicken stock, sun dried tomatoes, salt and pepper to chicken and garlic mixture, bring to a boil.

      4. Take about 2 tablespoons of broth from the chicken mixture and  place in a small bowl, stir in flour until dissolved, add back to chicken mixture heat until thickened, stirring frequently.

      5. Toss pasta and chicken mixture together and top each serving with 1 Tablespoon of parmesan cheese.
