Veggie & Chicken Pasta
Ingredients
- ½ lb whole wheat pasta (regular pasta will work as well)
- 1 Tablespoon olive oil
- 2- 4oz boneless skinless chicken breasts cut into cubes
- 1-2 bunches fresh broccoli cut into florets
- ¼ c sun dried tomatoes chopped
- 2-3 cloves fresh garlic, minced
- 1 c chicken stock (canned or boxed will work)
- Salt and pepper to taste
- 3 tablespoons parmesan cheese
- 1-2 tsp flour
Directions

Cook pasta according to package direction adding broccoli during the last 2 minutes of cooking time. Drain and set aside.

While pasta is cooking sauté chicken in olive oil over medium heat.; once chicken is cooked through, stir in garlic and cook an additional 30 seconds.

Add chicken stock, sun dried tomatoes, salt and pepper to chicken and garlic mixture, bring to a boil.

Take about 2 tablespoons of broth from the chicken mixture and place in a small bowl, stir in flour until dissolved, add back to chicken mixture heat until thickened, stirring frequently.

Toss pasta and chicken mixture together and top each serving with 1 Tablespoon of parmesan cheese.
